Celery – Apium graveolens.  The water in which celery has been boiled should always be saved and drunk as a herbal tea.  In fact any of the raw or cooked parts of the plant are most valuable, especially for anyone with any rheumatic problems.  Even celery salt is useful and greatly improves salads and other vegetables and savouries.

Celery tea is a mild sedative and some people drink it before going to bed.  It is a diuretic herb – completely harmless, but should not be taken in excess.
