Farmhouse Fare - recipes from country housewives collected by Farmer's Weekly

From Miss A Foster Hampshire

8oz black malt
1 oz hops
1 oz stinging nettles
1/4 oz black liquorice
2 medium sized potatoes
2oz brown sugar
1 oz yeast
10 pints water

When the water is at boiling point add herbs, malt, hops, liquorice and the potatoes well washed but not peeeled and perforated by a fork or darning needle.  Simmer gently for 1 hour, then strain into a pan, earthenware by preference.  Add sugar.  When about 95 degrees fahrenheit stir in the yeast, which has been dissolved in a little of the warm liquid.  Cover up and stand for 24 hours.  Skim off the yeast and put in bottles; corking lightly at first, tightening up 12 hours later.  Leave for 2 days.

You will then find it a beautiful creamy stout, with remarkable tonic properties.
